Et surtout pendant les chauds mois d&rsquo;\u00e9t\u00e9, une bonne alternative aux brochettes, c\u00f4telettes et autres.  <\/p>\n\n<p>Martin Ksoll, ma\u00eetre cuisinier et fondateur de la manufacture d&rsquo;\u00e9pices COOK&amp;GRILL \u00e0 Bad Goisern, est un v\u00e9ritable expert en la mati\u00e8re. Et r\u00e9v\u00e8le dans l&rsquo;interview ce \u00e0 quoi il faut penser lorsqu&rsquo;on grille de la viande de gibier &#8211; et comment pr\u00e9parer une cuisse de chevreuil enti\u00e8re.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-herr-ksoll-sommerzeit-ist-grillzeit-aber-viele-menschen-wagen-sich-nicht-daran-auch-wild-auf-den-griller-zu-legen-warum\"><strong>Monsieur Ksoll, l&rsquo;\u00e9t\u00e9 est la saison des barbecues. Mais beaucoup de gens n&rsquo;osent pas mettre aussi du gibier sur le gril. Pourquoi ?<\/strong><\/h3>\n\n<p>Je pense que les gens ont un tr\u00e8s grand respect pour la pr\u00e9paration et la cuisson du gibier. Griller du gibier prend un peu plus de temps &#8211; cela d\u00e9courage. Totalement \u00e0 tort, \u00e0 mon avis.<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Quelle est la viande de gibier qui se pr\u00eate le mieux au barbecue et pourquoi ?<\/strong><\/h3>\n\n<p>C&rsquo;est une question \u00e0 laquelle il n&rsquo;est pas si facile de r\u00e9pondre. Il ne s&rsquo;agit pas seulement du dos avec les filets, mais \u00e9galement d&rsquo;une cuisse savoureuse enti\u00e8re avec os ou d&rsquo;une \u00e9paule cuite dans un four \u00e0 vapeur. Mais aussi un foie de chevreuil, d\u00e9licatement fum\u00e9 sur une planche de c\u00e8dre. Le gibier est utilisable de mani\u00e8re tr\u00e8s vari\u00e9e.<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Comment reconna\u00eetre une viande de gibier de bonne qualit\u00e9 ?<\/strong><\/h3>\n\n<p>La couleur est tr\u00e8s claire : si elle est rouge\u00e2tre ou rouge-brun, cela indique la fra\u00eecheur de la viande. Plus l&rsquo;animal est jeune, plus sa viande est claire. Si la viande pr\u00e9sente une coloration brun\u00e2tre ou noire, je d\u00e9conseille l&rsquo;achat. La viande fra\u00eeche est en outre r\u00e9sistante \u00e0 la pression. Le chevreuil et le cerf doivent avoir une l\u00e9g\u00e8re odeur de noisette, le sanglier et le lapin de garenne une odeur neutre. Le li\u00e8vre sauvage, quant \u00e0 lui, a une odeur forte.<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Et la durabilit\u00e9 ?<\/strong><\/h3>\n\n<p>La viande de gibier fra\u00eeche ne doit pas \u00eatre conserv\u00e9e plus de deux jours au r\u00e9frig\u00e9rateur. S&rsquo;il a une odeur sucr\u00e9e ou acidul\u00e9e, il est avari\u00e9.<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Wild fonctionne-t-il sur tous les barbecues, qu&rsquo;ils soient au charbon de bois, au gaz ou \u00e9lectriques ?<\/strong><\/h3>\n\n<p>Oui, il fonctionne m\u00eame parfaitement sur le barbecue \u00e0 pellets. Un gigot de chevreuil l\u00e9g\u00e8rement fum\u00e9 entier avec l&rsquo;os &#8211; ce n&rsquo;est pas seulement un point fort visuel !<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>A quoi dois-je faire attention lorsque je fais griller du gibier &#8211; on dit qu&rsquo;il devient vite dur et sec ?<\/strong><\/h3>\n\n<p>Ici, on peut en tout cas s&rsquo;en tenir aux temp\u00e9ratures \u00e0 c\u0153ur. (Notes <a href=\"https:\/\/kerntemperatur.org\/wild\/kerntemperatur-wildfleisch\/\">: https:\/\/kerntemperatur.org\/wild\/kerntemperatur-wildfleisch\/)<\/a><\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Quelle marinade recommandez-vous ?<\/strong><\/h3>\n\n<p>Personnellement, je n&rsquo;aime pas trop utiliser de marinades, mais plut\u00f4t ce qu&rsquo;on appelle un dry rub, avec lequel j&rsquo;assaisonne la viande une heure avant de la griller. Pour \u00e9viter que la viande ne se dess\u00e8che, j&rsquo;aime utiliser du cidre de pomme avec du beurre liquide et un vinaigre adapt\u00e9. Ou du jus de groseille et du vinaigre.<\/p>\n\n<h3 class=\"wp-block-heading\"><strong>Et quels accompagnements pour quel gibier ?<\/strong><\/h3>\n\n<p>Tout est permis, \u00e0 commencer par les classiques comme le chou rouge, les f\u00e8ves, les pousses de choux, les champignons, les lentilles, etc. Comme accompagnement rassasiant, je recommande les quenelles de serviette, la polenta, les quenelles de semoule d&rsquo;\u00e9peautre ou les quenelles de pommes de terre.<\/p>\n\n<h3 class=\"wp-block-heading\">Recette :<\/h3>\n\n<p><strong><em>Cuisse de chevreuil enti\u00e8re (pour 4 personnes)<\/em><\/strong><\/p>\n\n<p><strong><em>Ingr\u00e9dients :<\/em><\/strong><\/p>\n\n<p>1 cuisse de chevreuil (avec os, mais sans l&rsquo;os final)<\/p>\n\n<p>150 g de beurre<\/p>\n\n<p>150 g de vinaigre de cidre<\/p>\n\n<p>2 cc de grains de poivre vert (\u00e9cras\u00e9s)<\/p>\n\n<p>150 g de miel<\/p>\n\n<p>150 ml de jus de pomme<\/p>\n\n<p>un peu d&rsquo;huile de colza<\/p>\n\n<p><strong><em>Pr\u00e9paration :<\/em><\/strong><\/p>\n\n<ul class=\"wp-block-list\" type=\"1\">\n<li>Retirer les tendons et les peaux de la cuisse de chevreuil.<\/li>\n\n\n\n<li>Hacher finement les ingr\u00e9dients de la p\u00e2te d&rsquo;\u00e9pices et les m\u00e9langer \u00e0 l&rsquo;huile de colza.<\/li>\n\n\n\n<li>Frotter le paleron de chevreuil avec la p\u00e2te d&rsquo;\u00e9pices et le faire griller indirectement dans le panier \u00e0 r\u00f4tir \u00e0 160 degr\u00e9s jusqu&rsquo;\u00e0 ce que la temp\u00e9rature \u00e0 c\u0153ur atteigne 35 degr\u00e9s.<\/li>\n\n\n\n<li>Entre-temps, badigeonnez plusieurs fois le chevreuil avec le gla\u00e7age.<\/li>\n\n\n\n<li>Le morceau de r\u00f4ti doit encore reposer 15 minutes avant d&rsquo;\u00eatre d\u00e9coup\u00e9.
