C&rsquo;est justement maintenant que la nature sort de son hibernation et que les premiers ingr\u00e9dients frais arrivent sur le march\u00e9 que nous devrions rapidement mettre tout ce qu&rsquo;il y a de meilleur dans une marmite (de soupe) &#8211; car vous pouvez alors souvent d\u00e9guster des plats color\u00e9s et pleins de saveur. Qu&rsquo;il s&rsquo;agisse d&rsquo;\u00e9pinards, d&rsquo;ail des ours ou d&rsquo;asperges, nous vous indiquons quels l\u00e9gumes sont de saison et comment pr\u00e9parer des soupes l\u00e9g\u00e8res et savoureuses, m\u00eame au printemps.  <\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-tipps-fur-die-perfekte-fruhlingssuppe\"><strong>Conseils pour une soupe de printemps parfaite<\/strong><\/h3>\n\n<p>Le printemps exige des soupes qui soient l\u00e9g\u00e8res et digestes sans pour autant perdre de leur saveur. Les bouillons clairs de l\u00e9gumes ou de poulet sont des bases id\u00e9ales pour permettre aux ingr\u00e9dients frais de s&rsquo;\u00e9panouir. <br\/><br\/>Les herbes comme l&rsquo;aneth, le cresson, la ciboulette, le persil ou l&rsquo;estragon sont de merveilleux compagnons pour les soupes de printemps. Elles apportent de la fra\u00eecheur et une note aromatique qui vous fait attendre avec impatience les premiers jours de chaleur. Le jus de citron ou le zeste de citron peuvent \u00e9galement \u00e9gayer la soupe et lui conf\u00e9rer une agr\u00e9able l\u00e9g\u00e8ret\u00e9.  <\/p>\n\n<p>La soupe d&rsquo;ortie, par exemple, met en valeur de mani\u00e8re tr\u00e8s agr\u00e9able le go\u00fbt tr\u00e8s aromatique, voire dominant, de l&rsquo;ortie. C&rsquo;est aussi une soupe tr\u00e8s saine qui purifie le corps et lui donne de l&rsquo;\u00e9nergie. <br\/><br\/>Pour obtenir une consistance cr\u00e9meuse sans alourdir la soupe, le lait, le lait de coco ou les pommes de terre peuvent \u00eatre utilis\u00e9s comme liant naturel. Ils donnent une sensation de velout\u00e9 en bouche sans \u00eatre lourds. <\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-gemuse-das-jetzt-saison-hat\"><strong>Les l\u00e9gumes de saison<\/strong><\/h3>\n\n<p>L&rsquo;ail des ours, dont la saison d\u00e9bute fin mars, est un favori du printemps et son ar\u00f4me intense est parfait pour les soupes. Une soupe \u00e0 l&rsquo;ail des ours est rapide \u00e0 pr\u00e9parer et devient particuli\u00e8rement onctueuse si l&rsquo;on y ajoute des pommes de terre (farineuses) &#8211; il en va de m\u00eame pour les soupes aux jeunes \u00e9pinards frais. Mais les feuilles de radis, dont la saison commence fin avril et qui restent souvent inutilis\u00e9es, peuvent \u00e9galement \u00eatre transform\u00e9es en une soupe verte et \u00e9pic\u00e9e &#8211; durable et savoureuse.  <br\/><\/p>\n\n<p>Les asperges sont \u00e9galement particuli\u00e8rement appr\u00e9ci\u00e9es &#8211; qu&rsquo;elles soient blanches ou vertes, elles se pr\u00eatent parfaitement \u00e0 la pr\u00e9paration d&rsquo;une soupe cr\u00e9meuse en avril. Ils ne correspondent plus \u00e0 la cuisine l\u00e9g\u00e8re qui caract\u00e9rise cette p\u00e9riode de l&rsquo;ann\u00e9e et peuvent maintenant \u00eatre remplac\u00e9s par des alternatives plus fra\u00eeches. <\/p>\n\n<p>La citrouille, un classique de l&rsquo;automne, a elle aussi atteint son apog\u00e9e. Son go\u00fbt sucr\u00e9 et lourd ne s&rsquo;harmonise pas avec la l\u00e9g\u00e8ret\u00e9 fra\u00eeche du printemps. De m\u00eame, nous faisons de la place pour des choux plus l\u00e9gers, car le chou blanc et le chou vert semblent d\u00e9sormais trop robustes pour la cuisine printani\u00e8re.  <br\/><br\/>En bref, les soupes de printemps sont l&rsquo;occasion id\u00e9ale de saluer la nouvelle saison et de c\u00e9l\u00e9brer le passage \u00e0 la cuisine l\u00e9g\u00e8re du printemps.
