Le chef du restaurant \u00ab\u00a0Bootshaus\u00a0\u00bb au bord du lac Traunsee, d\u00e9cor\u00e9 de 4 toques, a donc r\u00e9cemment publi\u00e9 son prochain livre de cuisine sur le sujet &#8211; \u00ab\u00a0Fisch gegrillt\u00a0\u00bb (Le poisson grill\u00e9) contient de merveilleuses recettes de poisson pour l&rsquo;\u00e9t\u00e9 au barbecue (ainsi que des accompagnements et des sauces), et le cuisinier de l&rsquo;ann\u00e9e 2023 donne \u00e9galement des conseils sur l&rsquo;\u00e9visc\u00e9ration, la d\u00e9coupe, l&rsquo;\u00e9cossage, le hachage et le fumage.<\/em><\/p>\n\n<p>Ce n&rsquo;est pas un hasard si de nombreux amateurs de barbecue ont du respect pour la cuisson du poisson : contrairement \u00e0 la viande et aux l\u00e9gumes, le poisson reste plus souvent coll\u00e9 \u00e0 la grille. \u00ab\u00a0Pour y rem\u00e9dier\u00a0\u00bb, explique Lukas Nagl, \u00ab\u00a0il faut avant tout oser la chaleur. La grille doit donc \u00eatre vraiment tr\u00e8s chaude pour les grillades directes\u00a0\u00bb. Il est \u00e9galement important de cr\u00e9er plusieurs zones de temp\u00e9rature, c&rsquo;est-\u00e0-dire de ne pas r\u00e9partir uniform\u00e9ment le charbon sous la grille, \u00ab\u00a0mais de cr\u00e9er un c\u00f4t\u00e9 chaud et un c\u00f4t\u00e9 moins chaud, sur lequel la cuisson peut ensuite se poursuivre indirectement\u00a0\u00bb.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-gusseisenpfanne-fur-das-grillen-von-fisch\"><strong>Po\u00eale en fonte pour griller le poisson<\/strong><\/h3>\n\n<p>En principe, les filets sont un peu plus faciles \u00e0 r\u00e9aliser. Le conseil de Nagl : \u00ab\u00a0Grillez-les toujours uniquement du c\u00f4t\u00e9 peau, jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient presque cuites, puis laissez le c\u00f4t\u00e9 chair embrasser la grille chaude pendant quelques secondes seulement, comme vous le feriez dans une po\u00eale\u00a0\u00bb. En parlant de po\u00eale, Nagl recommande aux amateurs de poisson grill\u00e9 d&rsquo;acheter une po\u00eale en fonte, \u00ab\u00a0car elle est vraiment polyvalente, aussi bien dans la cuisine que pour les grillades. Je ne suis en principe pas favorable aux ustensiles de cuisine rev\u00eatus, et surtout, ils n&rsquo;ont pas leur place sur un barbecue &#8211; la temp\u00e9rature \u00e9lev\u00e9e et le rev\u00eatement ne font pas du tout bon m\u00e9nage\u00a0\u00bb.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-fische-mit-festem-fleisch-fur-grillanfanger\"><strong>Poissons \u00e0 chair ferme pour les d\u00e9butants en barbecue<\/strong><\/h3>\n\n<p>Nagl conseille \u00e0 ceux qui s&rsquo;aventurent pour la premi\u00e8re fois \u00e0 griller du poisson de choisir des poissons \u00e0 chair ferme. \u00ab\u00a0L&rsquo;esturgeon, par exemple, est le poisson id\u00e9al pour le barbecue, car sa chair a une consistance proche de celle d&rsquo;un carr\u00e9 de porc et r\u00e9ussit vraiment \u00e0 tous les coups sur le gril. Un fo-<\/p>\n\n<p>Les filets de truite ou d&rsquo;omble sont en revanche plus fragiles. Il n&rsquo;a pas sa place directement sur le gril, mais est grill\u00e9 indirectement &#8211; soit sur une broche au-dessus des braises, soit sur une pierre \u00e0 sel ou \u00e0 pizza, ou encore emball\u00e9 dans une feuille &#8211; de la banane \u00e0 la figue et \u00e0 la noix, presque toutes les plantes comestibles conviennent\u00a0\u00bb.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-ein-hoch-auf-den-holzkohlegrill\"><strong>Vive le barbecue au charbon de bois<\/strong><\/h3>\n\n<p>Mais sur quel barbecue faut-il mettre ses poissons ? Nagl a un avis bien tranch\u00e9 sur la question : \u00ab\u00a0Personnellement, je suis un ami du bon vieux barbecue \u00e0 charbon. Un barbecue \u00e0 gaz a bien s\u00fbr aussi ses avantages &#8211; tout va plus vite, car il n&rsquo;est pas n\u00e9cessaire de faire un feu pour obtenir une braise parfaite, les temp\u00e9ratures sont plus faciles \u00e0 r\u00e9gler &#8211; mais : les ar\u00f4mes de fum\u00e9e et de fum\u00e9 qui se d\u00e9gagent d&rsquo;un barbecue au charbon sont pour moi tout simplement imbattables\u00a0\u00bb.<\/p>\n\n<h3 class=\"wp-block-heading\" id=\"h-rezept-tipp-aus-dem-buch-reinanken-saltimbocca\"><strong>Conseil de recette tir\u00e9 du livre :<\/strong> <strong>Saltimbocca de reinette<\/strong><\/h3>\n\n<p>Lukas Nagl aime utiliser les morceaux de queue de reinette pour ce plat. Tout autre poisson et toute autre coupe conviennent bien s\u00fbr, selon le chef, par exemple l&rsquo;omble chevalier ou la truite. D\u00e9posez ensuite un filet de reinette coup\u00e9 en deux, c\u00f4t\u00e9 peau vers le bas. Assaisonnez le filet avec le zeste d&rsquo;orange et le sel et placez la deuxi\u00e8me moiti\u00e9 du filet comme un sandwich, le c\u00f4t\u00e9 chair sur le c\u00f4t\u00e9 chair de l&rsquo;autre.
