When the temperatures rise, we want lightness – even on the plate. These five special desserts for summer are quick to make, wonderfully refreshing and bring culinary sophistication to any table.
Summer days taste of sunshine, of garden parties, of shimmering afternoons under a white blanket. When the heat makes you sleepy, the dessert should not be a burden, but rather invigorating: It should be fruity, cool, airy, with a subtle herbal note or a hint of the exotic. In this selection, we present five special desserts for summer – uncomplicated yet with that certain something. Perfect for guests, picnic baskets or quiet moments of indulgence under the apple tree.
Rosemary and strawberry panna cotta
Ingredients:
- 250 ml whipped cream
- 250 ml whole milk
- 80 g sugar
- 2 sprigs of fresh rosemary
- 1 vanilla pod
- 4 sheets of gelatine
- 250 g fresh strawberries
- 1 teaspoon lemon juice
Preparation:
Slowly heat the milk, whipping cream, sugar, scraped vanilla pod and rosemary sprigs, but do not boil. Leave to infuse for 10 minutes.
Soak the gelatine in cold water. Remove the rosemary and stir in the gelatine.
Pour into glasses and chill.
Puree the strawberries with the lemon juice and serve as a fruity topping on top of the frozen cream.
Apricot crumble with lavender and almonds
Ingredients:
- 600 g apricots, pitted and halved
- 1 tbsp lavender flowers (dried or fresh, unsprayed)
- 80 g sugar
- 80 g butter
- 100 g flour
- 40 g sliced almonds
- 1 pinch salt
Preparation:
Marillen in eine Auflaufform geben, mit etwas Zucker und Lavendel bestreuen.
Quickly knead the butter, flour, sugar, salt and almonds into a crumble and pour over the fruit.
Bake in a preheated oven at 180 °C for approx. 25 minutes.
Serve with whipped cream or vanilla ice cream.
Lemon and yogurt mousse with pistachios
Ingredients:
- 200 g Greek yogurt
- 250 ml whipped cream
- 80 g sugar
- Zest of 2 organic lemons
- 3 sheets of gelatine
- 2 tbsp coarsely chopped pistachios
Preparation:
Soak the gelatine, mix the yogurt with the sugar and lemon zest. Dissolve the gelatine and stir in. Beat the whipped cream and fold in.
Pour into glasses and chill for 3 hours.
Sprinkle with pistachios before serving – if you like, add a little lemon zest on top.
Peach tartare with mint sugar
Ingredients:
- 4 ripe peaches
- 2 tbsp brown sugar
- 1 handful of mint leaves
- 1 teaspoon lemon juice
- Optional: 1 dash apricot liqueur
Preparation:
Pfirsiche fein würfeln, mit Zitronensaft und ggf. Likör marinieren.
Finely crush or blend the mint with the sugar.
Serve the tartare on small plates and sprinkle with mint sugar.
Iced coffee parfait with dark chocolate
Ingredients:
- 3 egg yolks
- 70 g sugar
- 250 ml cream
- 1 strong espresso (cold)
- 50 g dark chocolate (finely chopped or grated)
- 1 tbsp coffee liqueur (optional)
Preparation:
Whisk the egg yolks with the sugar over steam until creamy. Remove from the heat, stir in the espresso and liqueur.
Whip the cream, mix in the chocolate, then fold into the egg mixture. Pour into ramekins and freeze for at least 6 hours. Allow to thaw slightly before serving and dust with cocoa powder.
Whether aromatic with herbs, fruity and tart or elegant with espresso – summer offers endless possibilities for creating sweet highlights. These special desserts are not only easy to make, but also show that lightness and indulgence go wonderfully hand in hand.
